Superfood Protein Bites


These healthy treats are so scrumptious that they have become a staple around here. Whip up a batch of these in about 10 minutes and pop them in the fridge until you’re ready to eat. These satisfy my sweet tooth while delivering some great health benefits too!

What is a superfood and why are these classified as such?
On your journey to a healthier diet, you will inevitably hear the term “superfood”. Basically, this means the food is packed with beneficial nutrients that are good for your body.

In this recipe, we have a few superfoods hidden behind a delicious sweet and salty exterior. You trickster, you.

  • Dark chocolate, carob, cocoa and cacao contain antioxidants including flavonoids and polyphenols. Additionally, certain minerals and vitamins. HOORAY!
  • Chia seeds are packed with goodies like Omega-3 fatty acids and the fiber helps clear out your digestive system. Porcelain throne… here I come.
  • Flaxseeds aren’t just great for digestion and antioxidants. They also contribute to healthy skin and hair. Rapunzel called, she wants her long locks back.

Ingredients:
2 cups oats
1 tbls carob powder
¼ cup ground flax seeds
2 tbls chia seeds
1 heaping cup vegan chocolate chips + some for drizzle
2 cups creamy peanut butter

Oooh. Balls. My favorite. 


Method:
  1. Combine all dry ingredients in a bowl. Ensure everything is properly mixed.
  2.  Add the peanut butter, one cup at a time. You may not need the entire 2 cups. The most important aspect to this is texture. You want the mix to be wet enough to hold together, but still relatively dry. Try forming a key lime sized ball. Does is stick together without crumbing too much? You have the perfect texture!
  3. Continue rolling small balls until you’ve used your entire mixture. Place on a clean baking sheet.
  4. Refrigerate for about an hour, or until the treats are no longer crumbly or sticky.
  5. Melt the extra chocolate and drizzle over treats. 

EAT!!!!!

I love to each a couple of these with my morning coffee. The bitter coffee and sweet treats are like a match made in heaven… or my mouth.

A few things:
-Mini chocolate chips work best for this recipe. You can also roughly chop a bar of chocolate.
-This is a base recipe. Feel free to add things or take them away. You can use honey and cut back the peanut butter. (Unless you prefer the vegan version.) You can try white chocolate or caramel bites. Experiment with chunky peanut butter instead of creamy. Get creative!
-The better ingredients you use, the better the product. Try organic, non-GMO. Choose a healthy peanut butter without added sugar.
-Ground flaxseeds is much easier for our bodies to digest than whole. I freshly grind my own using a blender. Personally, I find the taste of ground flax to be more palatable.
-Carob powder is a cocoa substitute which is easier on the digestive system and does not cause migraines. You can use regular cocoa powder or even ground cacao if you’d prefer.
